Interests: Understand the mechanisms underlying the reaction between the dietary nitrite derived species and macromolecules in the stomach mucosa that lead to molecular modifications like nitrosation. This modification can be involved in signaling processes involved in stomach physiology and pathology, while the gastric mucosa acts as an active bio-filter to the nitrite derived species.
